WA95 Driven by honey and molasses, the Badia a Coltibuono 2007 Vin Santo del Chianti Classico Occhio di Pernice is a pure beauty. Made with organic fruit, this dessert wine opens to a dark copper color and beautifully intense aromas of dried fruit, fig, honey, brown sugar and maple syrup. There is a vein of heat and warmth there that underlines the sweetness and the ripeness of the fruit.
Estate Notes: Garnet color with amber hues along the edge. Aroma of plum jam, seasoned leather, with spicy notes and a hint of oak. Full-bodied, lush, with an intriguing mix of balsamic notes, candied citrus, and spices.
100% Sangiovese from Monti in Chianti. This wine’s name means “Partridge eye” due to its garnet color with an amber edge. It is made from organically farmed, carefully hand-picked grapes planted in the best vineyards of the Chianti Classico region. The vines are 20-30 years old, situated on ideal southwest facing slopes at 250-270 meters above sea level. Soils consist of clay and limestone rock. Bunches are carefully selected and left to dry in well-ventilated rooms. Fermentation with wild yeast and aging take place in small oak casks, which are sealed and kept exposed to the seasonal variations in temperature. The finished wine ages 8 years in cask and oak barriques.
