Dirty air notwithstanding, the weather conditions during 2020 were exemplary. It has resulted in a fantastically deep and rich Cabernet vintage.
The concentrated blackberry and black cherry aromas are made even more appealing by sweet oak creaminess in this very inviting young red wine nose.
Further aroma complexities like bacon fat, brambles, Satsuma plums, roadside minerals, and fresh running water- falls all combine for a super impressive mountain style Cabernet.
Fresh and pleasing mouthfeel upon entry tightens over the considerable length to reveal powdery tannins (in keeping with its youth). The depth of flavor carried forward from the aromas is displayed as minerals and ripe fruit. Never green nor overly soft this is a large scale, dark and age-worthy SCM Cab.
World-class mountain terroir combined with micro- managed vineyard care leads to the highest quality Cabernet Sauvignon raw materials. This wine was vini- fied using the same small scale techniques we employ for our other great Cabs. Fermented in open top vats with hand punch downs, then aged in a combination of American and French oak barrels.
2020 continues our multi-faceted reset to methods and goals for Small Lot Cabernet.
• Less extractive fermentation and aging techniques.
• 11 month barrel aging regime
• More proactive tannin management during barrel aging.
• Screw caps (because I’ve had enough of cork taint)
