Aromatically the wine has notes of almost buttery lemon curd, as well as fresh cut grass and the zest of a lime. On the palate there are grilled peach flavors as well as a crisp, nearly crunchy pear-like texture alongside summer herbs.
The Paring wines are the second label from the acclaimed Hilt and Jonata properties. The Paring Sauvignon Blanc consists of small lots of fruit from the Jonata estate in Ballard Canyon that are not utilized in Jonata Flor. While not technically biodynamic, the Jonata estate vineyard is farmed to the highest standards; creating a functioning polyculture of bee hives, herds of ruminants, fruit, olives and of course, grapes. Once the grapes are harvested and pressed, the wine then ages in 1/3 new French oak, 1/3 neutral French oak, and 1/3 stainless steel, all for ten months.
