Aromas of light spice, crushed stones, lemon zest. Light on the tongue; flavors of apples, lemons and a peppery finish. Hand-harvested. Destemmed and pressed; fermented on indigenous yeasts in French oak barrels. Aged in older French barrels for one year. Bottled unfined and unfiltered.
The ‘Combottes’ vineyard faces east and sits high up on the slope, between 750 and 900 feet. Soils combine clay and limestone, with some marl, which imparts a sensation of minerality to the wine.
