WSI97 Harvested by hand on september 17 from grapes grown in our dry-farmed vineyard, the 2018 vintage of Barbour cabernet sauvignon has aromas of gooey blackberry pie, sweet cocoa, black currant, and plum. Â These combine with dark cherry, black tea, nutmeg, and brown earth on the palate. Â The tannins are typically barbour and are chewy and present, yet approachable. Â Dark fruit flavors dominate the lengthy finish. 100% cabernet sauvignon. Barrel aging: 65% new french oak for 22 months. Production: 347 cases
The fruit was destemmed and sorted, then fermented on its skins for approximately three weeks prior to a gentle pressing. Â Aged for 22 months in 65% new french oak, the wine has the density, structure and breadth of palate for aging. Â The wine was bottled without fining or filtration in july, 2020
