WSI97 Harvested by hand on september 17 from grapes grown in our dry-farmed vineyard, the 2018 vintage of Barbour cabernet sauvignon has aromas of gooey blackberry pie, sweet cocoa, black currant, and plum. These combine with dark cherry, black tea, nutmeg, and brown earth on the palate. The tannins are typically barbour and are chewy and present, yet approachable. Dark fruit flavors dominate the lengthy finish. 100% cabernet sauvignon. Barrel aging: 65% new french oak for 22 months. Production: 347 cases
The fruit was destemmed and sorted, then fermented on its skins for approximately three weeks prior to a gentle pressing. Aged for 22 months in 65% new french oak, the wine has the density, structure and breadth of palate for aging. The wine was bottled without fining or filtration in july, 2020
