The Silex is only produced from plots situated high on the slopes of Saint Andelain and only from vineyards that have large amounts of flint (clay / slate). The vines here range from 20-50 years and are pruned to extremely lower yields than in the other vineyards. The wine is aged in oak barrels (450/600 liters) and of course in the famous Dagueneau own barrels that have a cigar shape. The Silex is the absolute premier ‘Grand Cru’ among the Pouilly Fumé.
A wonderfully intense bouquet of flowers and resinous herbs rises from the glass of Dagueneau Fume de Pouilly Silex in anticipation of the bittersweet presence of Mediterranean herbs and white flowers with citrus notes. All this ends with an impressive final. This exceptional pouilly fumé naturally has the unique minerality that makes the Dagueneau wine so unique and sought after. The Silex is perhaps the most special and sought after Pouilly Fumé. Advice is to put this wine away for a while and uncork the bottle from 2019 (or try a sip with the Coravin and then put it away again). The Silex is extremely scarce and can be enjoyed even more if you manage to let it rest for some time and then you will enjoy it to the full.
