This Pinot Noir, which vine is 28 years-old, is grown on two hectares located on the Terroirs of Bué. The bunches are de-stemmed then undergo a maceration in round wooden vats. Fermentation takes place with indigenous yeasts, with cold pre-fermentation, punching down and gentle pumping over. The aging is entirely in barrels, none of which is new. The wine is racked after 11 to 15 months, depending on the tasting, then bottled without fining or filtration. Grape variety: 100% Pinot Noir
