Dry, sapid, round taste, pleasantly acidulous, fine and fading froth, light and lively colour with rosé shades. Characteristically pleasant and intense aroma. Grape is Lambrusco di Sorbara. Vinification: Light maceration, drawing off and refrigeration. Slow fermentation, ’Pris de Mousse’ in ‘cuve close’. Alcohol: 11%.
Pais well with the typical cuisine from Modena: Pasta, tortellini with spinach and ricotta served with butter and sage, tagliatelle, lasagne, sausage served with lentils and mashed potatoes.
