WE94 Black cherry and raspberry are on the nose, with an herbal, medicinal component expressed in a last aroma of salted black licorice. The palate stays earthy and herbal but brings in dark chocolate and a peppery heat with grippy tannins.
One bottle per vine – that’s what goes into a bottle of this Vino Nobile di Montepulciano. Fermented and aged in barrels. The aging process lasts for a year and a half and then the wine is bottled and aged a further 6 months in bottle before release. Off the grid winery – doing everything to re-balance the relation between man and nature.
Vino Nobile di Montepulciano is an appellation in the south of Tuscany that specializes in reds made of the local Prugnolo Gentile, a.k.a. Sangiovese, the most planted grape in Italy. Wines are medium-bodied with a freshness that works wonders with food. Cantina Salcheto is a winery in the hills outside of Montepulciano with serious ambitions about sustainability. They operate their own cellar system to maximize energy conservation, compost is used to make fertilizer, and they recycle all of their waste water. All of this makes for a refined character that speaks to it’s sense of place. Aromas of cooked strawberries, rosemary and cypress lead into stewed tomatoes and raspberry on the palate. Perfect with any dish involving cooked tomatoes and herbs.
‘Our mission is to seek quality, both in the vineyard and the cellar, with an unfailing respect for the character of the grapes.
Manual collections, sulfites free vinifications, native yeasts, “Tuscan Governo” method, large “botte” and “tonneaux” barrels are the tools used to get wines that we would like elegant and soft, with pronounced aromas and unique for each vintage released.
Wines predominantly made of Sangiovese, the prince of Tuscany, symbol of the Montepulciano terroir.
The 2019 vintage is a really interesting one thanks to an ideal climate: a harsh winter and a warm summer but with some rain, even in the delicate stage of final maturation, although never exceeding. Finally a really good millesime, bringing together freshness and elegance with a full and intense fruit.’
