Winemaker Francis Boudin is one of the last members of an old guard in Chablis, producers who refused to move with the technological times and “update” their methods of making Chablis. His practice of harvesting his older vines only by hand, aging his wines only in tank, and bottling his wines unfined and unfiltered—all rare in Chablis today—offers an unadulterated taste of Chardonnay from Chablis’ best chalk soils.
