The 2021 Titus Sauvignon Blanc displays great purity and brightness. The wine’s aromas are fresh and lively with impressions of lemon-lime, Bartlett pear, kiwi, kumquat, and blooming citrus. Inviting and smooth as it glides along the palate the wine is driven by flavors of citrus zest, pippin apple, fruit cocktail, and lemon tart. The crisp finish is clean and bright lingering with plumeria and stone fruit tones. 96% Sauvignon Blanc, 4% Viognier.
The Sauvignon Blanc was harvested after a beautiful warm Summer on August 21st and 22nd 2021. Immediately after picking was whole cluster pressed. The juice was transferred to a stainless steal tank where the fermentation took place. At the conclusion of fermentation the wine was gently racked to used French Oak barrels where it was aged for 4 months. The Cold Creek Viognier was barrel fermented and barrel aged. No new Oak was used in the vinification of this wine.
After 4 months of aging these wines were racked to tank and blended to be cold stabilized in preparation for bottling.
